I forgot eggs for a different recipe so I used what was in the fridge to great results. Roasted walnuts and portobello with goat cheese and pepper on greens with olive oil and a little balsamic, carrots, and grapes. Yum&lt;/p&gt;

Basic recipe: scrape out mushroom and leave the stem. Sautee mushroom inners as not to waste them (or burn the shit out of them like i did. Whoops). Fill the mushroom with a goat cheese/olive oil mixture (to make the cheese a little easier to spread- add a little at a time in a small dish and see) and pit stem side up in a 400 degree oven for 15 minutes. &lt;p&gt;Eggplant pasta and grilled peppers with pine nuts, feta, and balsamic reduction! I didn’t take a picture before I put the feta on and I ate it, but you’ll have to use your imagination.&lt;/p&gt;

&lt;p&gt;&lt;strong&gt;Pepper recipe&lt;/strong&gt; (thanks mom!) You can probably make half the balsamic glaze, but extra is not really a calamity…&lt;/p&gt;

&lt;p class="MsoNormal"&gt;I red pepper seeded and cut into quarters&lt;/p&gt;
&lt;p class="MsoNormal"&gt;I yellow pepper seeded and cut into quarters&lt;/p&gt;
&lt;p class="MsoNormal"&gt;1 tbsp olive oil&lt;/p&gt;
&lt;p class="MsoNormal"&gt;½ cup balsamic vinegar&lt;/p&gt;
&lt;p class="MsoNormal"&gt;1 tbsp brown sugar&lt;/p&gt;
&lt;p class="MsoNormal"&gt;½ cup crumbled feta&lt;/p&gt;
&lt;p class="MsoNormal"&gt;¼ cup toasted pine nuts&lt;/p&gt;
&lt;p class="MsoNormal"&gt;1 tbsp  chopped fresh parsley&lt;/p&gt;

&lt;p class="MsoNormal"&gt;Brush peppers with oil, season and grill 5 mins per side (medium high 350-400 F, I broil mine).  In the meantime mix vinegar and brown sugar, bring to  boil and simmer to  reduce by half until  thickened ~ 10mins.&lt;/p&gt;
&lt;p class="MsoNormal"&gt;Sprinkle fetal and pine nuts on peppers, drizzle with balsamic glaze, fresh parsley as garnish and serve.   I zap them under broiler to warm the feta if it was in the fridge then add parsley and serve.
